About
a month ago, we were having burritos for dinner and I wanted something
other than refried beans for a side dish. I love black bean salsa so I
tweaked the recipe a little and came up with this great side dish that
is super easy to prepare and tastes good without tortilla chips. .

Ingredients:
1 can (15 oz) Black Beans, drained and rinsed
1 can (15.25 oz) Whole Kernel Corn, drained
1 can Original Rotel, drained
1/2 tsp. Salt (or more to taste)
1/2 tsp. Onion Powder
1/2 tsp. Garlic Powder
Sour Cream
Shredded Parmesan Cheese
Finely chopped Walnuts
Directions:
Combine first 6 ingredients in a medium size bowl. Stir together and add additional salt if desired. Garnish each 1/2 cup serving with a dallop of sour cream on top and sprinkle with parmesan cheese and walnuts (about 1 Tablespoon of each). Enjoy!
