A few weeks ago I had a
craving for something "lemony" but didn't have a lot of time to make
lemon bars so I tried a lemon cookie recipe and oh, was it good & so
easy!
Double-Lemon Cookies
Ingredients:
1 pkg Lemon Cake Mix
2 T. lemon juice
Not quite 1/2 cup vegetable oil (see directions)
2 eggs
1 tub Lemon Frosting or Cream Cheese Frosting (loved these cookies with the cream cheese frosting)

Directions:
- Heat oven to 350 degrees. Grease cookie sheets really well or use a well-seasoned pampered chef stone.
- Place 2 tablespoons lemon juice in 1/2 cup measuring cup; add enough vegetable oil to fill the rest of the 1/2 cup.
- In a large bowl, combine lemon juice & oil with cake mix and eggs and stir with a spoon until dough forms.
- On cookie sheet, drop dough by teaspoonfuls. Bake 6-8 minutes or until set. Remove from cookie sheet to wire rack & cook completely.
- Spread with frosting and enjoy!
